Cotechino (gelatinous pork sausage in a natural casing) is a seasonal product - available from November to March.

It’s obtained by mincing both the fat and lean parts of pork meat carefully mixed spiced and filled in a natural casing, following the ancient Salumificio Gastaldi’s tradition.

Cook before eaten.
Cooking : boil in water (no salt) 3 hours at least - on a low flame.
Weight : traditional cotechino: 0,8 – 0,9 kg
Weight: cotechino 2 pieces: 0,3 kg
Dressing: salt and spices.
Preservation: refrigerator.
