Ciccioli (pork greaves) are pressed cakes of fatty pork.
It’s a seasonal product – available from November to March. Ciccioli are obtained by cooking selcted parts of pork meat. The lean part (cicciolo) tastes crisp and crunchy. They can be enjoyed with bread. Serve them with sparkling, light, young red wine.
